Producer
Corinne Perchaud is married to Chablis producer Jean-Pierre Grossot, and together they make a formidable pair. Like Grossot's wines, they are elegant, intense and nervy with superb definition and a wonderful capacity for ageing. They have a small domaine in the commune of Fleys, just south of Chablis itself, where they make Chablis and Premier Cru Chablis. Their 18 hectares of vineyard are divided into 13.35 hectares of Chablis, and tiny holdings of Premier Crus: Vaucoupin (1.45 hectares), Fourchaume (0.75 hectares) and Les Fourneaux (1.60 hectares). Average age of the vines is 25 years, although Corinne's steeply sloping Vaucoupin vines were planted back in 1962.Vineyards
The steep, north to northwest facing vineyards have a surface area of 18 hectares and the soil is chalky clay. The double Guyot trained vines are more than 20 years old on average.Vintage Information
A warm and dry April with periods of hot weather in the heart of summer, followed by a sunny and dry September, meant that fruit was harvested in good condition at perfect levels of ripeness.Vinification
The grapes were pressed immediately with a Bucher pneumatic press and no skin contact. The must was fermented at 20ºC in temperature controlled stainless steel tanks for 15 days, then racked lightly. The wines were earth and membrane-filtered to ensure a clear, fine wine, and bottled 9 months after the harvest.Tasting Notes
The wine is beautifully lifted on the nose, concentrated and elegant on the palate with a lovely balance of pure fruit and the classic mineral quality that characterises excellent Chablis.Vintage | 2006 |
