Description

Producer

Devaux is a dynamic co-operative located in the southern part of Champagne; it is one of the biggest vineyard holders in the region, with 1480 ha of vineyard in the Aube and the Cote des Blancs. This control over its grape supply is a rarity in Champagne, a region where growers traditionally sell to the houses who control the brands. As a result, Devaux also supplies a number of top houses in Champagne, but reserves its best grapes for its own wines. Due to the favourable southerly location of many of its vineyards, Devaux is a Pinot Noir and Rosé specialist. The quality of the wines illustrates why Tom Stevenson, the UK's leading writer on Champagne, listed Devaux as one of his top 10 fastest improving producers in Decanter magazine, and why France's esteemed La Revue du Vin has just voted Devaux as 2010's Best Co-operative of France.

Vineyards

The Pinot Noir grapes for Ultra D are sourced from the Côte des Bar, and the Chardonnay from the fine chalky soils of the Côte des Blancs & Vitry. The low yielding vines, with an average age of 25 years old, give good concentration and weight; combined with the high quality of the grapes, this means that the final dosage is very low making a dry but round style of champagne.

Vinification

The base wine is fermented in temperature-controlled stainless steel tanks after which 100 of the wine undergoes malolactic fermentation to give suppleness. 25% of reserve wines aged in French oak is added from previous vintages. Following bottling, the liqueur de tirage is added and the wine undergoes a slow second fermentation in bottle and extended ageing on its lees for at least five years (the legal minimum is 15 months). This results in a wine with a finer, more persistent mousse and greater potential for complexity. After disgorgement, the wine receives a Brut dosage of 2g/l.

Tasting Notes

Lovely pale gold in colour, with a fine, persistent mousse indicative of the long period of bottle ageing. On the nose Ultra D is nicely developed but still fresh, with notes of hazelnuts and spice. On the palate the low dosage allows the quality of the Pinot Noir fruit to shine through, with hints of ripe pear and more hazelnuts. But here's a wine that, thanks to a combination of intensity and maturity, ticks all the right boxes. Lovely apple and pineapple fizz, with honeyed rioche and nut concentration.
